I received this message in my DMs recently and it made me smile — because these Mighty Muffins really have been a staple for so many people for years.
They’ve actually been around for almost the entire life of my business, and over time they’ve become a favorite not just for my coaching clients, but also for friends, family, and anyone looking for a simple, nourishing snack.
So I thought it was time to finally share the recipe here!
A Real-Life Favorite
As a mom of two with busy sports schedules, a health coach, and a yoga teacher — not to mention a husband who travels — I’m constantly looking for ways to make real food practical in everyday life.
And I know I’m not the only one!
Whether you're juggling kids’ activities, work, workouts, or just trying to get something nourishing on the table without overthinking it, having simple go-to recipes makes all the difference.
These Mighty Muffins are one of those solutions.

They come together quickly with just a handful of real food ingredients and work as an easy breakfast, a pre-workout bite, an afternoon snack, or something to grab while driving kids around.
Why They’re So Mighty
Despite their simplicity, these muffins pack a powerful nutritional punch:
Banana — Natural sweetness (no added sugar necessary!) plus potassium and fiber for steady energy.
Egg — High-quality protein that helps keep you full and supports muscle repair.
Peanut Butter (or any nut butter) — Healthy fats and protein for long-lasting fuel.
Chia Seeds — Tiny but mighty — loaded with fiber, omega-3s, and minerals.
Dark Chocolate Chips — Antioxidants and just enough sweetness to make them feel like a treat.
Together, these ingredients create a balanced snack with protein, healthy fats, fiber, and natural carbohydrates — which means better energy and fewer cravings than most packaged bars.
Totally Customizable
Another reason people love these muffins is that they’re incredibly easy to customize.
Some favorite add-ins include:
blueberries
chopped walnuts
shredded unsweetened coconut
cacao nibs or cacao chips
pumpkin spice or cinnamon
You can really make them your own depending on what you have in the kitchen.

I love dunking mine in hot coffee
My husband spreads peanut butter on top
Nico eats them just as they are (and is often found picking out the chocolate chips, LOL)

Mighty Muffins Recipe
Ingredients
1 ripe banana, cut into pieces
1 egg
½ cup salted peanut butter (all natural, no added sugar)
1 tsp vanilla extract
½ tsp baking soda
½ cup dark chocolate chips (I love the Enjoy Life brand)
1 TBSP chia seeds
Optional spice
1 tsp pumpkin spice or cinnamon
Optional add-ins
¼ cup chopped walnuts
shredded unsweetened coconut
cacao nibs or chips (I love the Pascha 100% cacao chips)
blueberries
For the pan
coconut oil or cupcake liners
How to Make Them
Preheat oven to 400°F.
In a bowl, mash the banana using a fork or immersion blender until smooth.
Add the egg, peanut butter, vanilla, and baking soda. Mix with a whisk or immersion blender until fully combined and smooth.
Fold in the chia seeds, chocolate chips, and any other add-ins (nuts, blueberries, cacao chips, etc.).
Grease a muffin tin with coconut oil or use cupcake liners.
Fill each muffin cup about halfway with batter.
Bake for 9 minutes.
Allow to cool slightly… then enjoy!
Notes
• Best stored in the refrigerator (they last about 4 days on the counter).
• Any nut butter works – almond butter or sunflower butter are great alternatives.
• Sunflower butter is a great school-friendly option.
• This recipe is easily doubled if you want more muffins (I almost always double it!).
